Here's a closer look at Las Vegas' newest eateries, drinking spots, hotels, conference areas, private rooms, and other spaces available for events this spring. The new and renovated Las Vegas venues are available for corporate parties, weddings, fundraisers, outdoor functions, business dinners, team-building activities, conferences, meetings, and more.

SUSHISAMBA Las Vegas
SUSHISAMBA Las Vegas
SUSHISAMBA Las Vegas opened SAMBAROOM, a new private dining and event space, in November 2024. Drawing on bold South American influences, the space—tucked behind the main dining room—features custom leather banquettes, art deco-inspired flooring, lush greenery, and pendant lighting. Designed with versatility in mind, SAMBAROOM features four distinct areas—the Lower Lounge, the Upper Lounge (pictured), the Bahia Suite, and the Alcove—each offering a unique setting. These spaces can be used individually or combined to accommodate up to 200 guests for reception-style events, or 100 for seated dinners. (Individually, the Lower Lounge holds 50, the Upper Lounge holds 28, the Bahia Suite holds 14, and the Alcove holds 10.) SUSHISAMBA Las Vegas is located on the second level of The Palazzo Tower at the Grand Canal Shoppes inside The Venetian Resort.

W Las Vegas
W Las Vegas
In December 2024, MGM Resorts International and Marriott International officially debuted W Las Vegas, transitioning the 1,117-suite former Delano tower on the Mandalay Bay campus into the city’s first W Hotels property. The venue's stylish suites feature a clean color palette of whites and neutrals, along with floor-to-ceiling windows showcasing the Las Vegas Strip and surrounding mountains. W Las Vegas has 31 meeting rooms for intimate events and shares a campus with both Four Seasons Hotel Las Vegas—which has 38,200 square feet of meeting space—and Mandalay Bay, which offers a massive 2.1 million square feet of meeting and exhibit space. Details surrounding additional enhancements planned for W Las Vegas will be shared later this year.

Grand Prix Plaza
Grand Prix Plaza
Set to open on March 29, Grand Prix Plaza offers a dynamic new destination for Formula 1 enthusiasts and private event organizers alike. Spanning 39 acres and featuring over 100,000 square feet of attractions, the Plaza includes the Las Vegas Grand Prix Pit Building, which houses three immersive F1 experiences: F1 X (a 4D exhibition showcasing legendary F1 artifacts), F1 DRIVE (a karting attraction that takes place on part of the Las Vegas Strip Circuit grid), and F1 HUB (a flagship F1 store and elevated food and beverage space). Beyond these public attractions, the venue offers exclusive private event spaces across its three levels and rooftop—the Turn 1 Lounge, Cool Down Room, and GPP Garage—that are available for year-round rental.

Amaya Modern Mexican
Amaya Modern Mexican, located inside The Cosmopolitan of Las Vegas, opened in January. The elegant Tulum-inspired space, led by Michelin-starred chef Jason McLeod, was designed by the team at Petermax and showcases unique touches like a handmade ceramic chandelier that hangs overhead. A versatile, 750-square-foot semiprivate area is tucked away from the main dining space; it can accommodate as many as 40 people. Amaya is also available for full buyouts to maximize the entire 7,180 square feet, which can comfortably seat 200 or up to 250 for a standing reception. Guests also have the option to rent out just the bar area or the main dining room. For each event, Amaya offers a variety of family-style menus that can be personalized to fit the celebration.

MGM Grand Hotel & Casino
MGM Grand Hotel & Casino
MGM Grand Hotel & Casino is in the midst of a $300 million remodel encompassing all 4,212 rooms and suites within its main tower. The transformation—which unveiled its first round this month and should be fully completed by December 2025—draws inspiration from the glamour of the disco era combined with modern elements to create an atmosphere that is both playful and elegant. With this remodel, MGM Grand will add 111 suites to its main tower for a total of 753, ranging in size from 675 square feet to 2,572 square feet. In addition to the newly designed rooms and suites, MGM Grand is introducing several new dining venues and attractions this year. Developments include the early 2025 opening of Netflix Bites Vegas—a one-year culinary residency inspired by hit Netflix shows—and the summer launch of Palm Tree Beach Club, a tropical-inspired dayclub from world-renowned DJ Kygo’s Palm Tree Crew.

B Bar
B Bar
Looking for an upscale spot to take a VIP for after-work drinks? Earlier this month, Wynn Las Vegas debuted the new incarnation of B Bar, the resort’s intimate new destination for wine and spirits. (The former location of B Bar, located across the promenade, is being converted into a new Domestic High Limit area.) Designed by Todd-Avery Lenahan, chief creative officer of Wynn Design & Development, B Bar is centrally located within the resort where Wynn’s casino meets the Fairway Esplanade. The space takes cues from a collection of heritage architectural influences, utilizing polished mahogany, rock crystal, bronze fittings, and artisan glass—each element inspired by Lenahan’s favorite Old Fashioned cocktail. B Bar is open 24 hours a day, seven days a week.

Eataly Bar
Eataly Bar
Eataly Bar, located at Eataly Las Vegas within Park MGM, opened in January. Inspired by the laid-back allure of the Amalfi Coast, Eataly Bar boasts a chic horseshoe-shaped design and offers both indoor and outdoor seating, including a patio. The Eataly Bar cocktail menu draws inspiration from Italy’s tradition of aperitivi, offering 10 vibrant Italian spritzes, craft cocktails, and Italian wines. Food-wise, guests can enjoy a menu from Pizza al Padellino, the first Torino-style pizza concept to debut at any Eataly location in the United States. Overall, Eataly Las Vegas can accommodate as many as 1,200 guests for full buyouts; there’s also a 12-seat semiprivate chef’s table.

PRIME Steakhouse
PRIME Steakhouse
Chef Jean-Georges Vongerichten’s PRIME Steakhouse debuted a new look earlier this month. Located fountain-side at Bellagio Hotel & Casino, the restaurant’s modernized design features a living room-style lobby featuring a Saint Laurent marble door frame, 1940s Parisian sconces, and a host stand reminiscent of a fine jewelry display. Throughout the restaurant, there are French blue and caramel accents complemented by Italian damask fabrics, handmade wallcoverings, Venetian chandeliers, Baccarat-inspired carved glass and mirrors, and Saint Laurent marble accents. Soft layers of drapery create intimate and distinct areas within the 60-seat main dining room, while the private dining room features a sculptural piece depicting the Fountains of Bellagio in architectural form. PRIME's patio (pictured) seats 65 or holds 100 for receptions.

La Cave Wine & Food Hideaway
La Cave Wine & Food Hideaway
Jenna and Michael Morton’s La Cave Wine & Food Hideaway, located at Wynn Las Vegas, unveiled a renovation in November 2024. The eatery's transformation is accentuated by the colors of the Mediterranean; new features include natural light and cozy furnishings in the main dining room, plus a new terra cotta-tiled bar in the garden room. The restaurant, led by chef William DeMarco, spans 6,300 square feet between the intimate lounge, dining room, and indoor-outdoor garden room and terrace. The Garden Lounge (pictured) can seat 50 guests for both a la carte reservations and private dinners, while the Terrace can seat 40. Combined, the two rooms can hold 100 guests for a private seated dinner.

El Cortez Hotel & Casino
El Cortez Hotel & Casino
In February, El Cortez Hotel & Casino, the longest continuously running hotel and casino in Las Vegas, celebrated the completion of its propertywide expansion. The $20 million revamp added nearly 10,000 square feet to the property’s footprint on Fremont Street. Additions include two new bars—the Roulette Bar and Showbar—plus a new high-limit slots area, an expanded table games area, and a noodle restaurant playfully named Hot Noods (pictured). The hotel can host events in its famed Jackie Gaughan Suite, a one-of-a-kind slice of vintage Las Vegas. The adjacent Jackie Gaughan Parkway also provides ample space for outdoor activities, exhibitions, or events.
